Use What You've Got

I was in the mood for potatoes tonight, so I took a leaf out of Bethenny Frankel's book and used what I already had. Using what you have isn't a new premise, and I've been doing it for many years. However Bethenny is getting the message out there to millions and I love her for it. Plus she's hella funny.


This could serve 1 as a meal or 2/3 as an accompaniment.

Ingredients

3 medium sized potatoes - washed
3 tablespoons parsley pesto
3 slices fresh Parmesan
3 tablespoons pasta sauce (or fresh tomatoes or whatever kind of sauce you like!)

Method

Preheat oven to 200c. Line a baking tray with baking paper.

Cut into each potato length-ways and width-ways without cutting all the way through. You should be able to push the four corners apart, but the four corners should still be joined at the bottom.

Place half a tablespoon of the pesto on each side of the potato splits and place a slice of Parmesan in the middle of the four corners. Then push the four corners of the potato together. The pesto should hold the potato together. Repeat with remaining potatoes.

Next spoon a tablespoon of your chosen sauce over each potato. Make sure it goes down into the cracks and covers the top.

Bake in the over for 45 minutes or until cooked through.

Season with salt and pepper.
